From Fridge to Fabulous: 10 Delicious Ways to Repurpose Leftovers

1. Turn Roasted Vegetables into a Frittata

Have a tray of roasted carrots, peppers, or broccoli sitting in the fridge? Don’t let them wilt away. Dice them up and whisk them into a frittata or omelet. Add a sprinkle of cheese and some herbs if you have them, then bake or cook on the stovetop until golden.

Why it works: eggs are inexpensive, filling, and versatile. Combined with last night’s veggies, you’ve got a meal that feels brand new—and breakfast, lunch, or dinner is covered without spending another dime.

2. Shred Chicken into Tacos

Leftover chicken is one of the easiest foods to repurpose. Instead of reheating it plain, shred it and toss it in taco seasoning or even just a squeeze of lime with garlic powder. Warm it up, then tuck it into tortillas or lettuce wraps.

Top with whatever you’ve got on hand—maybe leftover salad, salsa, or even that jar of pickles hiding in the back of the fridge. Suddenly, what looked like a tired piece of chicken has turned into a fun, family-friendly dinner.
